to make garlic confit you simply need
-5 garlic bulbs Peeled completely
-3 cups vegetable oil or neutral oil to confit in
1. place garlic in small sauce pot and cover in oil, turn your stove burner on medium heat and let oil start bubbling with garlic in it.
2. when it begins to bubble turn heat down to medium low for about 10 minutes or until garlic is fork tender.
3. let cool and place into a container, this oil/ garlic is now preserved and will last for months in this state!

-1 #5 can of peeled plum tomatoes (whichever your prefered choice)
-1 onion peeled and diced
-5 garlic confit
-1 tsp red pepper flake
-1/4 cup fresh oregano (1 Tbl of dried in place of fresh)
-1/2 cup fresh basil (1.5 Tbl of dried)
1. warm oil in a stock pot (1/2 cup) in a stock pot begin sautéing garlic confit for 1 minute on medium high heat, add diced onion and continue sautéing.
2. when onion becomes translucent add tomatoes in and turn heat down to a medium low, add red pepper flake.
3. heres the long process, begin cooking on this heat for about an hour, gently stirring thoroughly about every ten minutes ( this process reduces liquid and brings out more natural sugars in the sauce itself)
4. when sauce has reduced about 25% add in basil and oregano and season to taste with salt and pepper.
5. use a stick blender, a food processor or a blender to puree sauce into a wonderful finished product. warm and use with pasta preferably... to make a tomato cream sauce add about a pint of cream into blender sauce and make a creamy tomato sauce for a change!

- 2 Cups Milk
-2 cups heavy cream/half and half
-2 ounces of butter
-2 ounces of flour
-2 cups of cheese of your choice
(preferably cheddar or aged cheese)
- salt and pepper to taste
1. in a small saute pan add your butter and on medium low heat melt, once melted add your flour and mix until it makes a thick paste. cook it on low for a minute and remove from heat.
2. in a medium sized stock pot add your milk and cream and cook on medium heat.
3. once Milk and cream become hot add your flour and butter mixture to the milk ( its called a roux) stir thoroughly with a whisk so it dissolves in your milk.
4. add your cheese an mix into your milk, turn your heat to a medium low as to not scald your milk. let it cook on low for about 5 minutes. it will begin to thicken.
5. add salt and pepper to taste.
6. add to your fresh pasta and toss to thicken together to make a great Mac and cheese!

- 4 cloves of garlic sliced thin
-1 tsp red pepper flake
-1 tsp lemon zest
-1 tblsp of finely chopped parsely
-Salt and pepper
1. in a saute pan add your olive oil and turn your burner on medium heat.
2. about one minute after you turn on your burner add your garlic and turn the heat down to medium low (you dont want to burn your garlic)
3. toast the garlic for about 30 second to give it minor color and add your rep pepper flake in.
4. shut the burner off and add lemon zest in give a wonderful fragrance and toss in your pasta.
5. turn your burner back on and toss your pasta into the sauce incorporating the chopped parsley.
6. enjoy!

1. in a saute pan on medium heat put your butter in and melt.
Brown butter Sauce-
1. in a saute pan on medium heat melt your butter, once completely melted, turn heat down to a medium low and continue to cook in pan. it will begin separating, gently move the pan in a circular motion to gently brown your butter.
Fun Things to add to your butter sauces
-Parsley
-red pepper flake
-onions
-parmesan
-fresh ground black pepper

this thickener is the big bad boy secret to thickening and adding a slight flavor to sauces since cooking became an art! and its always equal parts butter to flour! thats it!
1. over medium heat melt the butter in a pan, and then add flour.
2. cook out the flour for 1 minute or to add a nutty flavor cook it for 2 (itll have browned slightly)
